The National Food Institute, Technical University of Denmark, invites to Paw Dalgaard’s inaugural professor lecture on Friday 22 November 2013. Paw Dalgaard will give a lecture on background, status and perspectives within his research in predictive food microbiology. The purpose of his research is to increase understanding of growth and survival of microorganisms in food, and to improve assessment and management of microbiological food quality and safety.
Predictive microbiology is an important field within food microbiology. In this field, the National Food Institute researches how to predict growth, survival and inactivation of microorganisms during processing, storage and distribution of food.
The institute also develops mathematical models, methods and software to determine, predict and improve shelf-life of food products. The main purpose is to improve food quality and safety through better assessment and management of microorganisms.
Predictive microbiological models are essential when concentrations of microorganisms in food cannot easily be measured and, thus, must be predicted, e.g. at the time of consumption. As an example, the institute’s predictive models for listeria have often been used for assessment and to document control of the growth of this serious pathogenic bacteria in various ready-to-it meat and fish products.
